(not) dreaming of cakes

So when I say that I want to bake cakes for the rest of my life, what I really mean is that I want to decorate cakes for the rest of my life. Don’t get me wrong, I love baking cakes. I love the delicacy of the operation, the sifting, folding and gentle pouring. I love the smell of the cake just beginning to take crumb in the oven. But what keeps me up at night (and has for years now) is the technicolor peep show of elaborate, beautiful, stylish decorations.

I am pretty sure this is weird.

My pastry bag talents are limited. I have used a variety of icings on my cupcakes and cookies at home, but I have only worked seriously with whipped cream and nasty commercial royal icing. I can ice and edge a cake, but my crumb layers are usually too thin and I’ve never used a flower nail. I need classes and I need practice.

I’m thinking about spending some money here.
