i can’t even pay them for it

I am fairly certain that what I want to be when I grow up is a pastry chef. But the next step is difficult. There’s a hole where culinary school should exist.

I am not going to spend money on years of playing with butter and eggs when the science I love is a wholly different one. A lot of cooks start as nonvegans, go to school, and then come over from the dark side. But there is no vegan pastry school for those of us who get it together earlier in life.

I started this blog because I have a lot of things to say about food and cooking, but also because I want to document the learning process. There is so much to learn. I’m going to have to go at it piece-meal, getting skills where I can. I want to have a chronicle of my progress, so that when I can mold marzipan into flowers, make gum paste decorations, and bake you an awesome cake for your divorce or your retirement or your punkrock circus, I’ll know it and other people will know it. I also would like to set a precedent, so anyone else who wants what I want will have some help along the way.
