black sugar, how come you taste so good?

So, one interesting bakery-related item that I’ve found in South America is black sugar. The internet tells me that Japanese people use black sugar to make syrup and cough drops, and that the sugar itself is as good for you as molasses because it hasn’t been stripped of nutrients. My mouth tells me that I like it more than brown sugar, of which I am a fan.

It has a smokey flavor in the same way that some sea salt does. I have an apartment with an oven (!) rented for the month of February, and I’ll be taking the black sugar along to make something like this.
