I’m back in the US after five months in South America. I had assumed that I’d be frantic to bake from the moment the plane touched down, desperate for the first rich plateful of cookies. Yet I felt strangely hesitant for the first few days. What if I’d lost the Level 5 touch?
So I baked something I suck at, just to get the lame pussyfootery out of the way.



I went back to the old standby, the Joy of Cooking. This is the first time I’ve used the most recent edition, which edits out my favorite brownie recipe but also includes a funny warning about the dangers of pouring soda into children. There were two recipes that, as far as I could tell, were completely identical, so this is either “rustic” or “white.” Take your pick.

It felt good to put my hands into the ever-befuddling alchemy of yeast growth, and the results even tasted good. So now I’m ready to start on the cakes.
